Ingredients

  • Thick Cut Bread (Texas Toast or Brioche): The foundation of your epic breakfast creation. The bread must be sturdy enough to hold up to the rich, custardy egg soak – so skip the pre-sliced loaves.
  • Large Eggs: Eggs transform simple bread into decadent French toast. And they’re also the star of your fluffy scrambled egg filling.
  • Half & Half: Makes the custard coating extra luxurious.
  • Vanilla Extract: Infuses your French toast with a sweet, aromatic depth.
  • Ground Cinnamon & Nutmeg: Warming spices that make your French toast taste so cozy and delectable. Cinnamon is a must, but nutmeg takes it up a notch.
  • Butter: It ensures your French toast develops a crisp, golden exterior and lends deep flavor to your soft scrambled eggs.
  • Salt & Pepper: The seasoning power couple that wakes up the flavor in your scrambled eggs. Season to taste.
  • Bacon: Crispy, salty, smoky perfection. Need I say more?
  • Cheddar Cheese: Sharp, tangy cheddar that melts marvelously between the layers of French toast and scrambled eggs.
  • Powdered Sugar, Maple Syrup, and Berries: The holy trinity of French toast toppings. You’ll also use powdered sugar to sweeten the custard.

How to Make French Toast Breakfast Sandwich

Picture this: two slices of perfectly golden, cinnamon-kissed French toast hugging a generous layer of fluffy scrambled eggs, crispy bacon, and melty cheddar cheese.

It’s like your favorite breakfast items decided to throw a party between two slices of bread!

And while there are a few elements, I promise it’s so easy to whip up!

1. PREP: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.

2. BACON: Bake on the sheet tray for 15-20 minutes until crispy, flipping at least once. Transfer to a paper towel-lined plate to drain.

3. FRENCH TOAST: While the bacon cooks, whisk the custard ingredients until smooth. Dip the bread into the bowl, coating both sides, then cook in butter until golden.

4. EGGS: Scramble the eggs with milk, salt, and pepper to your desired level of doneness.

5. ASSEMBLE: Start with a slice of French toast. Top it with scrambled eggs, a slice of cheddar cheese, bacon, and another slice of French toast.

6. SERVE: Dust with powdered sugar and serve with maple syrup and berries. Enjoy!

Cook the Bacon on The Stove:

I think the oven method is best because you can work on the other elements while the bacon does its thing.

But if you prefer, here’s how to cook the bacon on the stove:

  1. Place the bacon slices in a cold skillet, making sure they’re not overlapping.
  2. Turn the heat to medium-low. As the skillet heats up, the bacon will start to release its fat.
  3. Cook slowly, turning occasionally, until it’s crispy and browned, about 10-15 minutes.
  4. Transfer the cooked bacon to a paper towel-lined plate to drain.

Need some tips before you start? I’ve got you covered:

  • Bread selection. Texas toast or brioche work well because they’re thick and can handle the egg mixture. They can also hold fillings without falling apart. You can experiment with other types of bread, such as Challah or baguette.
  • Slice the bread thick. Don’t get pre-sliced bread, which is usually too thin (unless you pick Texas toast, of course).
  • Don’t soak the bread too long. 5-8 seconds per side is more than enough. Also, let the excess drip off before cooking; otherwise, your toast will be soggy.
  • Cooking temperature. Cook the French toast over medium-high heat. This gives the toast a nice golden brown color on the outside and a cooked-through interior.
  • Scrambled egg tips. Cook the scrambled eggs over medium-low heat to prevent them from becoming too dry or overcooked. Stir gently to create soft curds.
  • Serving suggestions. Serve the sandwiches with powdered sugar, maple syrup, and berries for a sweet finish. You can also add whipped cream to make the dish more decadent.

Variations

Like any good breakfast dish, this one is super versaitle. Here are a few fun ideas:

  • Cheese. Try different cheeses like Swiss, Provolone, or Pepper Jack.
  • Veggies. You can’t go wrong with fresh veggies. Sliced avocado, tomato, fresh red onion, and spinach are fantastic options. Or try some cooked veggies like a roasted sweet potato slice or caramelized onions.
  • Protein. Try sausage patties, turkey bacon, or chorizo instead of regular bacon.
  • Eggs. Not a fan of scrambled eggs? Try this tasty sandwich with over-easy or over-medium eggs instead.

How to Store

If you’re looking for a breakfast that will wow your taste buds and leave you feeling happy and content, you’ve got to try these French toast breakfast sandwiches.

They’re a total treat and perfect for a lazy weekend brunch or even a special occasion.

I know I’ll be making these again and again!

Got leftovers? Here’s what to do:

To Store: Wrap each sandwich individually in aluminum foil or plastic wrap and place in an airtight container. Store in the refrigerator for up to 2 days.

To Reheat: Unwrap the sandwich and place it on a microwave-safe plate, heating for 1-2 minutes until warm. For a crispier texture, reheat in a preheated 350°Fahrenheit oven for 10-15 minutes.

Note: These sandwiches are best enjoyed the day they’re made.

This French toast breakfast sandwich is a dreamy combination of cinnamon-kissed French toast, fluffy scrambled eggs, crispy bacon, and melty cheddar cheese.

Ingredients

  • For the French Toast
  • 3 large eggs

  • 1 cup half & half

  • 1/4 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 2 tablespoons butter

  • 4 thick slices of bread, such as Texas toast or brioche

  • For the Sandwich
  • 6 slices bacon

  • 2 tablespoons butter

  • 3 large eggs

  • 2 teaspoons milk or cream

  • salt and pepper, to taste

  • 2 slices cheddar cheese

  • powdered sugar, maple syrup, and berries to serve

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil (for easy cleanup).
  • Cook the bacon: Arrange the bacon slices in a single layer on the baking sheet. Bake for 15-20 minutes or until crispy, flipping at least once for even cooking. Transfer the bacon to a paper towel-lined plate to drain.
  • Make the French toast: While the bacon cooks, whisk 3 eggs with the half & half, powdered sugar, vanilla extract, cinnamon, and nutmeg in a large bowl.
  • Warm a large skillet or griddle over medium heat and melt 2 tablespoons of butter.
  • Dip each slice of bread in the egg mixture, coating both sides. Let each slice sit in the bowl for about 10 seconds.
  • Cook the bread slices in the skillet until golden brown, about 2-3 minutes per side. Transfer to a plate and cover loosely with foil to keep warm.
  • Cook the eggs: In the same skillet used for French toast, melt 1-2 tablespoons of butter over medium heat.
  • Add the eggs, milk, salt, and pepper. Gently stir to break apart the yolks, then leave to cook for 30 seconds. Gently stir the eggs until scrambled and cooked through.
  • Assemble: Place a slice of French toast on each plate. Top with the scrambled eggs, a slice of cheddar cheese, the bacon, and finally, another slice of French toast.
  • Dust with powdered sugar and serve with maple syrup and berries. Enjoy!

Notes

  • Slice the bread thick. Don’t get pre-sliced bread, which is usually too thin.
  • Don’t soak the bread too long. 5-8 seconds per side is more than enough.

  1. This recipe is basically a Croque Monsieur, a French breakfast sandwich. I’ve made them many times but totally savoury, no sugar, no cinnamon. Absolutely delicious change from grilled ham, egg and cheese.
