These muffin recipes are so good, you’ll want to make a different flavor every day of the month. And these lemon poppyseed muffins should be at the top of your list.

Ingredients

  • For the Muffins:
  • 2/3 cup granulated sugar

  • 1/2 cup vegetable oil

  • 2 eggs

  • zest from 2 lemons

  • 1 1/3 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 2 tablespoons poppy seeds

  • 1/2 cup buttermilk

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon vanilla extract

  • For the Glaze:
  • 2/3 cup powdered sugar

  • 2 tablespoons fresh lemon juice

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Line 10 muffin cups with muffin liners.
  • In a bowl, sift flour, baking powder, and salt. Stir in the poppy seeds.
  • In a separate large bowl, beat sugar and oil over medium speed. Beat in the eggs and lemon zest until well combined.
  • Gradually add the dry ingredients to the wet mixture alternately with the buttermilk and lemon juice. Mix gently just until smooth. Stir in the vanilla.
  • Spoon the batter into the lined muffin cups. Bake for 25 to 35 minutes, or until the tops bounce back when lightly pressed.
