Okay, okay, I do actually know what a galette is. The word “galette” roughly translates to “little flat cake,” in French.

The most common type is a flaky puff pastry stuffed with your choice of yumminess. Kind of like a Danish tart, but bigger and better.

Galettes can also be made with yeast-raised doughs, resulting in a dish more like a calzone. They can be sweet or savory, but they’re always delicious.

BONUS: Galettes are a perfect introduction to pastry, as they’re very easy to make.

Not only that, they’re meant to be rustic. Essentially, they’re ugly-beautiful, so you won’t need to fuss with pre-baking, fancy latticework, or weaving.

Best Galettes for When Pie Isn’t Easy Enough

1. Summer Peach Galette

Sweet floral peach is the star of this gilded galette. It has notes of warm caramel, bright lemon, and fragrant cinnamon.

You’ll start by making a super buttery, soft, and flaky pie dough.

Then, channel your inner artist and layer fresh, juicy peaches on the dough in a pattern of your choosing.

Fold the edges of the crust over the filling and bake until golden.

2. Plum Galette

I don’t know about you, but I’m tired of plums sitting on the sidelines of fruit desserts. A little sweet, a little sour, plums are a great choice for a galette.

Their unique taste works very well with the buttery flavor of the crust. The apricot glaze adds a bit more sweetness, which leaves you with a perfect bite.

3. Apple Galette

This apple galette is the perfect mix between an apple turnover and an apple pie. The best part is that it’s not nearly as fussy as either of those fall favorites.

While the Granny Smith is the most commonly used apple in baking, this recipe recommends using a variety of apples.

This will give the galette a fantastic variety of taste, texture, and color.

This would be absolutely delicious with caramel or cinnamon chip ice cream.

4. Mushroom Galette

Earthy, robust, and comforting, this mushroom galette will be a hit at your next dinner party.

This recipe uses a sour cream pastry dough, which yields a super tender and flavorful crust.

That crust pairs perfectly with caramelized mushrooms, piquant blue cheese, fresh herbs, garlic, and onions.

Your guests might even assume it came from the nearest fancy French restaurant. It’s THAT good.

5. 5-Minute Fruit Galette

In under 30 minutes (from start to finish) you will have a beautiful, delicious, and sort-of nutritious dessert with this 5-minute fruit galette.

All you’ll need is some pre-made refrigerated pie crust (homemade or store-bought) and whatever fruits you have in the fridge.

6. Mixed Berry Galette

Berries are really good for you. They’re filled with antioxidants that can fight inflammation, brighten skin, reduce cholesterol, and more.

They’ve even been shown to help decrease oxidative stress (think gray hair, fatigue, joint pain, memory loss- all the things that age you faster.).

Do you know what else fights stress? Dessert, or so I’ve heard.

Now I’m not a doctor, but I think if you add power-packed berries to a delicious, relatively low-sugar dessert, then you’ve hit the jackpot.

Essentially, this dish has the power to soothe your soul and relieve your stress with one small bite.

7. Broccoli and Cheese Galette

If you run a quick Google search on “broccoli and cheese,” you’ll receive approximately 155,000,00 results in less than a second.

I think that proves that this complementary duo is quite magical.

Now, add it to a delicious shortcrust pastry and you’re in business! It’s savory, cheesy, and everyone in your family will love it.

8. Savory Zucchini Galette

This amazing veggie-filled galette is light and satisfying. Tender zucchini, bright tomatoes, and salty cheeses work together in delicious harmony.

This galette also features cheese baked into the crust for even more flavor.

9. Pear Galette

Pears are juicy and sweet, making them a perfect choice for a galette. This recipe is very simple.

It uses shortcrust pastry, fresh pears, and apricot preserves. The result is divine.

If you would prefer something a bit more “fancy,” you could add brie, nuts, or other fruits.

10. Strawberry Galette

This show-stopping galette is the perfect summer treat.

The shocking red of the strawberry filling contrasts beautifully with the golden crust. It’s a visual masterpiece, and it tastes delicious.

11. Spinach and Feta Galette

Spanakopita is one of my all-time favorite savory pastries, but it can be finicky to make from scratch, and pre-made phyllo dough can be hard to find.

So, this spinach and feta galette brings all of the best parts of spanakopita together in this no-fuss pastry.

It uses pre-made puff pastry dough instead of phyllo, which is easier to find and has a higher fat content.

That means that the pastry part will be super buttery and rich. While I love phyllo, I love butter a little more.

12. Savory Leek Galette

If you love a fancy quiche, then you’ll love this savory leek galette.

It has a delicious whole-grain crust with a filling of sweet leeks, kale, eggs, and creamy cheeses.

Fresh herbs, anchovy paste, and mustard round out the flavors with amazing umami.

13. Tomato Galette

This galette is almost too beautiful to eat… almost. Heirloom tomatoes give this fresh dish its bright colors and flavors.

A tangy seasoned goat cheese spread accompanies and complements the tomatoey goodness.

14. Butternut Squash and Roasted Garlic Galette

Rough and rustic, this butternut squash and roasted garlic galette is perfect for fall.

Roasting the vegetables beforehand helps to bring out their sweetness and softens them for a creamy, delicious bite.

Salty cheese and fresh herbs round out the palate.

15. Roasted Vegetable Galette

Bright and colorful, this galette will draw the eye of everyone around your table.

In this roasted vegetable galette, butternut squash, carrots, beets, and sweet potatoes sit on a bed of blue cheese and onion.

It’s hearty, salty, and luxuriously rich.

16. Olive Oil Galette with Spicy Greens

While you would typically use puff pastry or a shortcrust for your galette, this olive oil version is just as flaky and delicious.

Sauteed leeks, garlic, and Swiss chard are seasoned with red pepper flakes and parmesan cheese to make the filling.

Serve it with a cooling Greek yogurt sauce, and you’ll have the perfect appetizer for an elegant dinner.

17. Nectarine Galette

Succulent and aromatic nectarines shine in this galette.

Much like their peachy counterparts, nectarines are sweet and juicy, making them perfect for this pastry dish. Cardamom adds a lemony spice to this picturesque dish.

Top with whipped cream or ice cream and you have the perfect dessert for a summer party.

18. Chocolate Banana Galette

If you are trying to impress anyone in your life, you should definitely make this chocolate banana galette. It just might be the most luxe galette on this list.

It features warm caramelized bananas and dreamy chocolate pooling in every nook and cranny.

It has a cinnamon-scented, rich, and delicate pastry. Simply sublime.

Do you want to know the greatest part? It’s ready in only 30 minutes!

19. Fall Veggie and Ricotta Galette

“Eat the rainbow,” is a phrase nutritionists use to encourage people to make more colorful meals.

The different colors of fruits and vegetables signify different vitamins and minerals, so eating more colors means you eat more nutrients.

This fall veggie and ricotta galette features a rainbow of delicious vegetables.

Kale, butternut squash, cauliflower, and red onion all contribute loads of nutrients to the dish, as well as a lovely hue.

20. Sourdough Galette with Delicata Squash

Crusty, creamy, cheesy, sweet, and savory, this sourdough galette with delicata squash will be your new winter favorite.

Roasted delicata squash and roasted shallots bring elements of savoriness.

Those flavors are balanced with a tangy yogurt sauce and mozzarella. Finish it with roasted delicata seeds and scallions.

Don’t worry if you can’t find delicata squash. Butternut squash has a similar flavor and would work well in this dish.
