In my circle of friends and relatives, rhubarb is an incredibly overlooked vegetable.

And rhubarb cocktails? Forget about it! Most people I know wouldn’t even consider trying them. 

That’s actually what inspired me to write this article. I’m a huge fan of rhubarb cocktails. They usually feature bright colors and an even brighter taste.

Rhubarb is tart, bordering on outright sour. It gives cocktails the perfect zingy kick and doesn’t make them too sweet. 

I love a tart mixed drink. Super sugary sweet just isn’t my thing. If you feel the same way, these 13 rhubarb cocktails are perfect for you. 

1. Refreshing Rhubarb Cocktail with Tequila and Lime

This lovely cocktail is as tasty as it is pretty.

It features the bold, zesty flavors of rhubarb, lime, and citrus. It’s tart and tangy with just enough sugar to make it enjoyable. 

I prefer to make it with gin, but some swear tequila is the way to go. Either way, it’s a brisk, refreshing drink that’s perfect for spring or summer. 

2. Rhubarb Lemon Fizz

This perfectly pink mixed drink looks like pink lemonade. However, it’s much fizzier and a little tarter, as well. 

It’s an easy cocktail to whip up. You’ll need vodka, rhubarb simple syrup, and lemon juice. Finally, top it with your choice of club soda or sparkling wine.

This sweet-n-tangy martini is cold, frosty, and delicious. Plus, its attractive hue makes everyone want a second look. (Once they taste it, they’ll want a second sip, too.)

Still, it’s incredible and at least just as good. It’s minty, zesty, and reasonably strong. 

You won’t find many people who don’t appreciate it. 

11. Strawberry Rhubarb Mimosa

Do you enjoy the light sweetness of mimosas but wish they had a little more oomph? Try these strawberry rhubarb mimosas instead. 

They contain everything you love about strawberry mimosas. However, the tart addition of rhubarb gives them more of a kick.

Still not sold on them yet? Then how about this: they’re pretty good for you. I know that seems crazy, but it’s also true. 

These are loaded with antioxidants and vitamin C. Of course, too much of anything is never a good thing.

But if you’re going to imbibe, why not get some vitamins while you’re at it?
