After a spin in the air fryer, they’re crispy and have a surprising amount of flavor for a simple veggie snack.
These bad boys are low in fat and calories, which is great for your waistline. And they pair well with everything from chicken to fish.
Like most air fryer recipes, you don’t need a vat of oil to make them crispy. Instead, you’ll dip them in beaten eggs and a breadcrumb mix.

Air Fryer Zucchini Chips Ingredients
The beauty of this recipe is how simple it is.
I added some seasonings, which you can tweak as you like. Or leave them out. The Parmesan should be more than enough!
Here’s what you need:
- Fresh Zucchini. Select two firm, medium-sized veggies that have a nice shape. Steer clear of large ones, which can be too watery.
- Breadcrumbs & Parmesan. Go with Panko breadcrumbs for the best texture. And be sure to freshly grate the cheese yourself.
- Seasonings. A mixture of garlic powder, salt, and pepper. If you want a smoky finish, add a half teaspoon of paprika, as well.
- Egg. The coating on the zucchini so the crumbs stick.
- Olive Oil Spray. This is the key to the crispiest chips! Be sure it’s olive oil spray, as regular cooking spray can ruin the basket of your air fryer.
How to Make Air Fryer Zucchini Chips
Follow these steps to make air fryer zucchini chips:
1. Slice the zucchini and preheat the air fryer to 400 degrees.
2. Make the breading. Mix the breadcrumbs, cheese, garlic, paprika, salt, and pepper in a medium-sized bowl. Beat the eggs in a separate bowl.
3. Coat the zucchini. Dip the zucchini slices into the egg and then the breading mixture. Thoroughly coat the slices on both sides.
4. Cook. Lay the slices in a single layer in the air fryer basket. Spray the tops with olive oil spray. Then, cook for 10 minutes, flipping the slices once halfway through.
5. Serve. Serve the chips with dipping sauces, and enjoy!
Tips and Tricks
Here are a few tips and tricks to keep in mind:
- Cut the zucchini into uniform slices. The closer the slices are in size and shape, the more evenly they’ll cook.
- Don’t overcrowd the basket. You’ll see this tip a lot in my air fryer recipes. I don’t repeat it to be annoying or repetitive. I repeat it because it’s important. An overcrowded air fryer won’t cook food correctly.
- They’re best served hot. While you can keep leftovers for a few days, these chips are best served immediately. So, eat them straight from the air fryer as soon as they’re cool enough. Don’t make them ahead of time.

How to Store
As mentioned, zucchini chips taste best when fresh.
But that doesn’t mean you have to trash your leftovers! They’ll still taste good, though they may not be as crispy after they cool down.
To Store. Place the cooled chips in an airtight container with paper towels between each layer. Refrigerate them for 2 to 3 days.
To Reheat. Toss leftover chips in the air fryer. Warm them for 2 to 3 minutes at 400 degrees Fahrenheit.
I don’t recommend freezing zucchini chips. Once thawed, their texture won’t be pleasant.
