If you’re looking for a list of Anaheim pepper recipes, you’ve come to the right place. I may have only included 15 on this list, but they’re 15 of the very best. 

Before we get to them, though, let’s back up for a second. Let’s talk about why you’d even want to cook with Anaheim peppers.

What’s so special about them, anyway?

Stuffed Anaheim Peppers with Beef and Beans

Anaheim peppers are also known as California or New Mexico peppers. They’re great additions to any Latin, Central American, or Tex-Mex dish.

They’ll add bright pops of color (green or red) and have a great flavor.

Additionally, they’ll add a nice bit of heat but aren’t too hot. They’re mild and delicious.

This seven-ingredient salsa takes just 5 minutes to make! It’s fantastic as a dipping sauce or on top of an otherwise bland or dry protein.

It’s bright and colorful and perfectly balances on the line between sweet and savory. If you like to get adventurous with your salsa choices, you’ll love it. 

8. Santa Maria Style Pinquito Beans

Including soaking time, pinquito beans take some time to make – almost 12 hours! However, the process for cooking them is painfully simple.
