Ingredients

  • 4 slices bacon, chopped

  • 2 medium Russet potatoes, diced

  • 1 sweet potato, peeled and diced

  • 1/2 yellow onion, diced

  • Salt and pepper, to taste

  • 1 large fried egg

Instructions

  • Heat a cast iron skillet over medium-high heat. Cook bacon until it starts to release its fat and becomes crispy, about 5-7 minutes. Remove and set aside, leaving the bacon fat in the skillet.
  • Add the Russet and sweet potatoes. Cook and stir occasionally until they brown and soften, about 10 minutes.
  • Halfway through cooking the potatoes, add the onions. Cook until the onions are translucent and the potatoes are fork-tender.
  • Mix in the cooked bacon and season with salt and pepper to taste.
  • Garnish with a fried egg and sprinkle more salt and pepper, if desired.
