I have to admit that I’ve been a little obsessed with this Cheesecake Factory Louisiana Chicken Pasta recipe recently.

But when I saw this chicken Murphy recipe, I knew I had to make it.

It’s warm, filling, and packed with flavor. But if you’re not from Jersey Shore, you might be wondering, what exactly is it?

This Italian-American classic is made with chicken, Italian sausage, and a medley of veggies. 

But what really sets this dish apart is the delicious sauce.

That glorious goodness is made with white wine, diced tomatoes, and pepperoncini peppers.

The chicken and sausage bring the savory, the peppers add a sweet tang, and the mushrooms give this dish an amazing umami richness.

Plus, the subtle acidity from the pepperoncini peppers and brine really takes it to the next level!

Let’s just say that “insanely good” is an understatement!

Chicken Murphy Ingredients - Olive Oil, Chicken, Salt, Pepper, Sausage, Bell Peppers, Mushrooms, Tomatoes and Seasoning

Ingredients

  • Olive oil: To brown the chicken. 
  • Chicken: Cut into cubes. You can use breasts or thighs. 
  • Flour: Used to coat the chicken before cooking, giving it a crispy sear.
  • Salt and pepper: To season to taste. 
  • Italian sausage: A flavorful and spicy sausage that pairs perfectly with chicken.
  • Bell peppers: Colorful and sweet, bell peppers add a delicious crunch and flavor to the dish. Use red and green bell peppers
  • Onion: You can use red or white onion. 
  • Cremini mushrooms: Earthy and flavorful, they add a delicious umami taste to the dish.
  • White wine: Used to deglaze the skillet and create a rich, flavorful sauce.
  • Tomatoes: Canned, diced tomatoes add depth and acidity to the dish.
  • Pepperoncini peppers and brine: Provide a subtle heat and acidity that gives the dish its signature taste.
  • Chicken stock: Adds richness and depth to the sauce, and helps to keep the chicken moist.
  • Italian seasoning: A blend of herbs and spices that add a savory and slightly sweet flavor to the dish, tying all the flavors together.

How to Make Chicken Murphy

  1. Prep the pan. Start by heating some olive oil in a large skillet with high sides. You want it to be nice and hot over medium heat. 
  2. Coat the chicken. Give the chicken a nice coating of flour, salt, and pepper. Be sure they’re perfectly seasoned before they hit that hot skillet.
  3. Sear the chicken. Add the chicken to the skillet and let it sizzle away for 1-2 minutes per side. Cook it until it’s nice and golden brown on all sides before removing it from the pan.
  4. Brown the sausage. Add the sausage to the skillet and let it brown on both sides. 
  5. Cook the vegetables. Add the chopped bell peppers, onions, and cremini mushrooms to the skillet. Cook them until they’re softened and the mushrooms are perfectly browned. 
  6. Add the wine. Deglaze the skillet with some white wine and let it simmer away until it’s reduced by half. This adds some serious flavor to this dish.
  7. Add the other ingredients. Add diced tomatoes, pepperoncini peppers, pepperoncini brine, chicken stock, and Italian seasoning to the skillet. 
  8. Assemble the Murphy. Now, add back in the chicken and sausage, breaking up the sausage into pieces. Let everything simmer together for 15-20 minutes until the chicken is cooked through.
  9. Enjoy. Serve up the Chicken Murphy and enjoy!

Tips:

  • Use high-quality ingredients like fresh chicken and Italian sausage for the best flavor.

  • When adding white wine to the dish, be sure it’s one you would actually drink. If it doesn’t taste good to you, it won’t taste good in the dish.

  • The sausage will render a good amount of fat. So, pour off all but 2 tablespoons before adding the onions, peppers, and mushrooms. This will help keep the dish from being too oily.
  • Serve this dish over pasta. It’s best to serve it over cooked pasta that’s been tossed in olive oil and garlic. Angel hair or penne pasta are my go-to choices

Variations:

  • Swap out the chicken for beef, pork, or even shrimp for a different twist on the dish.
  • Use different sausages such as spicy Italian sausage, chorizo, or even vegetarian sausage.
  • Add some diced potatoes to the skillet to make the dish heartier and more filling.
  • For a spicy kick, add some red pepper flakes or cayenne pepper.
  • Use fresh cherry tomatoes instead of canned, diced tomatoes for a slightly sweeter flavor.
  • For a creamier sauce, add a dollop of heavy cream or sour cream towards the end of the cooking process.
  • If you’re watching your carb intake, you can leave out the potatoes and add an extra ¼ pound of chicken for a protein boost.
  • Not a fan of sausage? No problem. Leave it out and add an extra 1/4 pound of chicken.
  • If you’re looking to cut back on sodium, replace the pepperoncini brine with a tablespoon of white wine vinegar

How to Store Chicken Murphy

To store leftover Chicken Murphy, place it in an air-tight container and keep it in the fridge for up to 3 to 4 days. 

To reheat it, use a covered oven-proof dish or a stovetop and cook it over low heat until warm.

Ingredients

  • 2 tablespoonss olive oil

  • 1 pound chicken, cut into cubes

  • 1/4 cup flour

  • Salt and pepper

  • 3 Italian sausage links

  • 1 red bell pepper, chopped

  • 1 green bell pepper, chopped

  • 1 large onion, chopped

  • 8 ounces cremini mushrooms, quartered

  • 1/2 cup white wine

  • 1 can diced tomatoes

  • 1/2 cup pepperoncini peppers, sliced

  • 1/2 cup pepperoncini brine

  • 1 cup chicken stock

  • 1 tablespoon Italian seasoning

Instructions

  • Heat the olive oil in a large skillet with high sides over medium heat.
  • Place the chicken in a large bowl and coat it with flour and salt and pepper.
  • Brown the chicken on all sides, 1-2 minutes per side
  • Remove the chicken from the skillet and add the sausage to the skillet. Brown the sausage on both sides.
  • Remove the sausage from the skillet and add the red bell pepper, green bell pepper, onions, and mushrooms. Cook until the peppers and onions are softened and the mushrooms are browned. Stir occasionally.
  • Deglaze the skillet with the wine. Simmer until the wine has reduced by half.
  • Add the diced tomatoes, pepperoncini peppers, brine, chicken stock, and Italian seasoning to the skillet. Then, add the chicken and sausage back into the skillet. Break the sausage into pieces if desired.
  • Simmer for 15-20 minutes or until the chicken is cooked through. Serve and enjoy!

    • Hi, Beverly! It’s actually pepperoncini brine, though I completely understand the confusion. Those two words are far too much alike. Pepperoncini are a type of peppers. They often come pickled in jars. (You can find them on the same aisle as pickles, typically.) The brine is the juice that they come pickled in. 🙂
