This easy croissant breakfast sandwich is loaded with fluffy eggs, crispy bacon, and gooey cheese. It’s a classic combo that always satisfies.

Ingredients

  • 2 large croissants

  • 4 slices thick sliced bacon or ham

  • 4 eggs

  • salt and pepper, to taste

  • 1-2 tablespoons butter, for frying

  • 4 slices cheddar cheese

Instructions

  • Cut the croissants in half horizontally. If desired, lightly toast the inside in a dry skillet or under a broiler. Set aside on serving plates.
  • Cook the bacon in a skillet over medium heat (or under a broiler) to the desired level of crispiness. If using ham, fry lightly in a skillet until warm. Transfer the cooked bacon to a paper towel-lined plate and loosely cover with foil to keep warm.
  • In the same skillet, melt 1-2 tablespoons of butter over medium heat. Gently beat the eggs in a small bowl with a pinch of salt and pepper. Then, add them to the skillet and cook, stirring occasionally, until they’re set but still moist.
