From chips and dip to breadsticks, pizza, and stuffed peppers, these finger food recipes offer a little bit of everything. And if you want to impress a crowd, try this recipe for spinach and cheese puff pastry swirls!

Ingredients

  • 3 tablespoons butter (unsalted or salted)

  • 1 medium onion, diced

  • 1-2 cloves of garlic, minced

  • 1 pound fresh spinach, stems removed (8 ounces frozen spinach can be used if thawed and drained)

  • 1/2 teaspoon salt

  • black pepper (to taste)

  • dried herbs like thyme, tarragon, and dill (optional)

  • 8 ounces cream cheese, softened

  • 6-8 ounces shredded cheese (such as Swiss, mozzarella, Colby jack, or cheddar)

  • 2 puff pastry sheets, thawed

  • 1 egg, beaten (for egg wash)

  • 2 tablespoons sesame seeds, for garnish

Instructions

  • Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  • Melt the butter in a large skillet over medium heat. Then, add the onions and sauté. Once the onions are translucent, add the garlic and sauté for another minute. 
  • Add the spinach to the skillet and cook until wilted. (see note for frozen spinach)
  • Add the salt, pepper, and any optional dried herbs. Mix well, then remove from heat. Allow the mixture to cool for 2 to 3 minutes before moving to the next step.
  • Combine the cooled spinach mixture with cream cheese in a large mixing bowl. Mix well, then gently stir in the shredded cheese. 
  • Lightly flour a clean surface. Then, roll the thawed puff pastry dough out onto the floured surface. Spread the cream cheese mixture evenly over the dough.
  • Starting from one edge and moving to the other, tightly roll the puff pastry dough. 
  • Cut the rolled pastry into 1-inch slices. Transfer them to the prepared baking sheet, leaving at least 1/2 inch of space between them.
  • Brush the slices with the egg wash to ensure they’re golden when baked. Sprinkle with sesame seeds.
  • Bake for 15 to 20 minutes or until the pastry is cooked through and golden brown.
  • Remove the spinach and cheese puff pastry roll-ups from the oven. Let them cool slightly, then serve warm, and enjoy!

Notes

  • If using frozen spinach, be sure it’s thawed and well drained. Add it with the cream cheese and shredded cheese.
  • To thaw frozen pastry: place pastry sheets on a tray in the fridge for 60 minutes, or 20 minutes at room temp. It should be cold and slightly firm, but rollable. If it’s too soft, the rolls won’t hold their shape.
