Looking for the best keto side dishes? This keto cauliflower au gratin turns a classic comfort dish into a low-carb delight with each creamy bite.

Ingredients

  • 1 large head of cauliflower, cut into florets

  • 1 tablespoon olive oil

  • 1 cup sour cream

  • 1/2 cup Gruyere cheese, grated

  • 3 cloves garlic, minced

  • Salt and pepper, to taste

  • 2 tablespoons Parmesan cheese, grated

  • Fresh parsley, chopped for garnish

Instructions

  • Place cauliflower florets in a microwave-safe bowl. Add a splash of water, cover, and microwave on high for 5-7 minutes, or until the cauliflower is tender but not too soft. Drain well and pat dry with paper towels.
  • Preheat your oven to 375 degrees Fahrenheit. Grease a baking dish with the olive oil.
  • In a small bowl, mix the sour cream, gruyere, garlic, salt, and pepper.
  • Add cauliflower and sour cream mixture to the prepared baking dish. Toss well to coat. Sprinkle parmesan evenly on top.
  • Bake for 10 minutes, or until golden brown on top.
  • Cool for a few minutes, and garnish with fresh chopped parsley.
