‘Ohana Bread Pudding

‘Ohana bread pudding is no ordinary pudding.

Apart from the crunchy on the outside, moist on the inside bread, you’ve got thick caramel sauce, sweet banana slices, and decadent vanilla ice cream to top off this sweet sensation.

The harmony of crisp and tender, sweet and salty, and hot and cold makes for a phenomenal dessert that’s to die for.

Ohana Bread Pudding

‘Ohana – in Hawaiian, it means welcome, but over at Walt Disney World, it’s a fantastic family-style restaurant that serves the best skewered meats and bread pudding.

If you’ve ever been to Disney World’s Polynesian Resort, you’ve probably had at least a bite of this heavenly dessert. Over the years, it has become one of the most iconic and beloved desserts of the theme park.

The best part? If you order any of their dishes, you get the pudding for free! You can also get single-serve portions of the pudding at Tambu Lounge.

But who says you have to go all the way to Disney World just to have a slice of the iconic pudding? With this recipe, you can smell the aroma and taste its magical flavor in the comfort of your own home.

Tips & Tricks

  • While you can use French bread for the pudding, I highly suggest that you use ‘Ohana breakfast bread. This specialty bread contains pineapple and coconut, giving the dish so much more of that Hawaiian flavor.
  • If you don’t have French or ‘Ohana breakfast bread available, use any bread that has a good chew, such as challah or brioche.
  • Cover the pudding with aluminum foil during the first 30 minutes of baking. This will ensure even cooking and will prevent the bread from going dry.

Ingredients

  • For the bread pudding:
  • 5 eggs

  • 3 cups whole milk

  • 1/2 tsp salt

  • 1/2 tsp nutmeg

  • 1 1/2 cup sugar

  • 8 cups French, Challah, or ‘Ohana breakfast bread

  • For the bananas foster sauce:
  • 4 oz sugar

  • 4 oz brown sugar

  • 4 oz corn syrup

  • 4 oz unsalted butter

  • 1 cup heavy cream

  • 1 tsp vanilla extract

  • 1 cup spiced rum

  • 1 cup banana slices

Instructions

  • Bread Pudding
  • In a large bowl, mix together the eggs, milk, salt, sugar, and nutmeg. Set aside.
  • Slice the bread into 2-inch pieces. Place the bread on a cookie sheet pan.
  • Place the baking pan in the preheated oven and bake bread for 15 minutes, or until lightly toasted.
  • Take the bread out of the oven and place into the egg and milk mixture.
  • Pour the mixture into a greased 10-inch cake pan. Bake in the oven for 1 hour at 325 degrees. (Be sure to lower oven temperature by 25 degrees.)
  • Let the bread pudding cool for 5 minutes before serving.
  • Top with ice cream and enjoy!
  • Bananas Foster Sauce
  • In a large saucepan, combine the sugar, brown sugar, corn syrup, butter, and half of the heavy cream. Bring to a boil and slowly add the remaining heavy cream while keeping the mixture at a steady boil.
  • Add spiced rum and flambe.
  • Mixture will brown slightly. Cook for 3 minutes until candy forms into a firm ball in cold water. Then remove from heat and add vanilla extract. Add sliced bananas. Serve warm over bread pudding.

Now that both key elements are ready, it’s time to assemble the pudding! Place the bread pudding on a bowl or plate. Then place a scoop of vanilla ice cream on top. Drizzle that beautiful banana foster sauce generously on top of the ice cream and serve. Best served hot.
