Looking for a homemade pasta sauce the whole family will love? You can’t go wrong with this heavenly roasted red pepper pasta sauce.

Ingredients

  • 1 (16 ounce) jar roasted red peppers, drained

  • 1 cup unsweetened almond milk

  • 3/4 cup fresh basil leaves, plus more for garnish

  • 6 oil-packed sun-dried tomatoes

  • 3 tablespoons extra-virgin olive oil

  • 1 tablespoon fresh lemon juice (or more to taste)

  • 2 garlic cloves

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon sea salt (or more to taste)

Instructions

  • Add all ingredients to a blender and blend on high until the mixture is smooth and creamy. Taste the sauce. Then, season with more lemon juice and/or salt if desired. 
  • If using immediately, pour the sauce into a large skillet. Heat over medium heat until warm. (Approximately 5-6 minutes.) Then, add the cooked pasta.
  • Store unused pasta sauce in an airtight container in the fridge for up to 5 days. 

Notes

  • For a bit of heat, add a dash of cayenne pepper in with the other ingredients in the blender.
