If you want some fun and exciting ways to use up Thanksgiving leftovers, I’ve got you covered. This leftover sandwich is big and delicious! Try it once, and you’ll be hooked!

Ingredients

  • 8 slices bread (preferably sourdough, but any thick-cut sandwich bread works)

  • 2 tablespoons unsalted butter (for toasting)

  • 4 tablespoons mayonnaise

  • 2 tablespoons Dijon mustard (optional)

  • 2 cups leftover turkey, thinly sliced

  • 1 cup leftover mashed potatoes, warmed

  • 1 cup cranberry sauce

  • 1 1/2 cups leftover stuffing

  • 1/2 cup leftover gravy, warmed

  • 1/2 cup green leaf lettuce or baby spinach (optional)

  • 1/2 cup assorted Thanksgiving leftovers (like cooked green beans, sweet potatoes, etc.), optional

Instructions

  • Optional Toasting: Warm the butter in a skillet over medium heat. Add the bread and toast on both sides until goldne. Set aside.
  • In a small bowl, mix the mayonnaise and Dijon mustard (if using). Spread this evenly over one side of each bread slice.
  • Divide the sliced turkey between four slices of bread.
  • Spoon a layer of mashed potatoes over the turkey.
  • Add a layer of cranberry sauce, followed by stuffing.
  • If using more leftovers, add them now. Then, drizzle the warm gravy over the top.
  • Finish with the lettuce, add the four remaining bread slices, mayo side down.
  • Press gently to compact the sandwich.
  • Slice in half and serve immediately.
