Savor the flavors of the season with this Winter Kale Salad! It’s a delightful mix of roasted butternut squash, pecans, and cranberries tossed in a tangy vinaigrette.

Ingredients

  • For the Roasted Butternut Squash:
  • 1 medium butternut squash, peeled and cubed

  • Olive oil

  • Salt and pepper

  • For the Vinaigrette:
  • 1/4 cup extra virgin olive oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon maple syrup

  • 1 teaspoon Dijon mustard
